Hobak Jeon, Korean zucchini fritters, are pan-fried zucchini slices dipped in flour and egg, then cooked until crispy. They're often served with a soy sauce, vinegar, sometimes with a bit of sugar or sesame seeds.

Ingredients

1-2 fresh zucchini

1/2 cup of flour

3 Eggland's Best eggs, large

1 tablespoon of sesame oil

1 tablespoon of olive oil (or any oil)

Preparation

  1. Slice zucchini into 1/4 inch thick slices
  2. Prepare a plastic bag with 1/2 cup of flour
  3. Place zucchini slices into the plastic bag and shake to coat each slice with flour
  4. In a bowl, beat 3 eggs and add 1 tablespoon of sesame oil
  5. In a skillet on medium heat, add 1 tablespoon of oil. Once hot, dip one floured zucchini slice into the egg batter and place on the skillet to cook. Continue until the pan is filled
  6. Cook on each side until both sides are golden brown (2-3 minutes per side)
  7. Serve with soy sauce
