An easy crust on the bottom, apple filling, topped with a crumble.

Ingredients

Crust/crumble:

¼ cup Eggland's Best Liquid Egg Whites

1 ½ cups old-fashioned oats

1 cup all-purpose flour

½ cup light brown sugar, packed

1 tsp cinnamon

¼ tsp salt

¼ tsp baking soda

½ cup unsalted butter, melted

1 tsp vanilla extract

Apple filling:

3 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp work great)

2 tbsp brown sugar (adjust based on apple sweetness)

1 tsp cinnamon

1 tbsp lemon juice

1 tbsp cornstarch (helps thicken)

Preparation

  1. Preheat oven to 350°F.
  2. Line an 8x8-inch baking dish with parchment paper or lightly grease.
  3. In a large bowl, mix: oats, flour, brown sugar, cinnamon, salt, baking soda.
  4. Add melted butter, vanilla, and egg whites. Stir until crumbly but moist.
  5. Press 2/3 of the mixture into the bottom of the pan to form a crust. Reserve the rest for topping.
  6. Bake for 10 minutes (pre-bake helps keep the crust from getting soggy).
  7. In a medium bowl, combine diced apples, brown sugar, cinnamon, lemon juice, and cornstarch.
  8. Mix until apples are well coated.
  9. After the crust has pre-baked, spread the apple filling evenly over it.
  10. Crumble the reserved oat mixture over the apples.
  11. Bake for 30–35 minutes, or until the top is golden and the apple filling is bubbling slightly.
  12. Let cool completely in the pan (at least 1 hour, or chill for clean slices).
  13. Slice into 9 or 12 bars.
