Apple crisp bars
An easy crust on the bottom, apple filling, topped with a crumble.
Ingredients
Crust/crumble:
¼ cup Eggland's Best Liquid Egg Whites
1 ½ cups old-fashioned oats
1 cup all-purpose flour
½ cup light brown sugar, packed
1 tsp cinnamon
¼ tsp salt
¼ tsp baking soda
½ cup unsalted butter, melted
1 tsp vanilla extract
Apple filling:
3 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp work great)
2 tbsp brown sugar (adjust based on apple sweetness)
1 tsp cinnamon
1 tbsp lemon juice
1 tbsp cornstarch (helps thicken)
Preparation
- Preheat oven to 350°F.
- Line an 8x8-inch baking dish with parchment paper or lightly grease.
- In a large bowl, mix: oats, flour, brown sugar, cinnamon, salt, baking soda.
- Add melted butter, vanilla, and egg whites. Stir until crumbly but moist.
- Press 2/3 of the mixture into the bottom of the pan to form a crust. Reserve the rest for topping.
- Bake for 10 minutes (pre-bake helps keep the crust from getting soggy).
- In a medium bowl, combine diced apples, brown sugar, cinnamon, lemon juice, and cornstarch.
- Mix until apples are well coated.
- After the crust has pre-baked, spread the apple filling evenly over it.
- Crumble the reserved oat mixture over the apples.
- Bake for 30–35 minutes, or until the top is golden and the apple filling is bubbling slightly.
- Let cool completely in the pan (at least 1 hour, or chill for clean slices).
- Slice into 9 or 12 bars.
