Fluffy Egg White Oatmeal Protein Muffins
Ingredients
1 cup Eggland’s Best Liquid Egg Whites
1 ½ cups (135 g) rolled oats
1 medium banana, mashed
2 tbsp honey or maple syrup
1 tsp vanilla extract
1 tsp baking powder
½ tsp cinnamon
¼ tsp salt
Optional: ¼ cup chocolate chips or berries
Preparation
- Preheat oven to 350°F.
- Blend all ingredients (except chips/berries) until mostly smooth.
- Fold in chocolate chips or berries.
- Pour into muffin cups (¾ full).
- Bake 18–20 minutes, until tops are set and lightly golden.
- Let cool before removing
