Fluffy Egg White Oatmeal Protein Muffins

Ingredients

1 cup Eggland’s Best Liquid Egg Whites

1 ½ cups (135 g) rolled oats

1 medium banana, mashed

2 tbsp honey or maple syrup

1 tsp vanilla extract

1 tsp baking powder

½ tsp cinnamon

¼ tsp salt

Optional: ¼ cup chocolate chips or berries

Preparation

  1. Preheat oven to 350°F.
  2. Blend all ingredients (except chips/berries) until mostly smooth.
  3. Fold in chocolate chips or berries.
  4. Pour into muffin cups (¾ full).
  5. Bake 18–20 minutes, until tops are set and lightly golden.
  6. Let cool before removing
