Soft, high-protein breakfast tacos made with scrambled egg whites, avocado, and salsa. They’re fast, delicious, and great for refueling after practice.

Ingredients

3/4 cup Eggland's Best Liquid Egg Whites

2 Eggland's Best Eggs

2 small corn tortillas

1/4 avocado, sliced

2 tbsp salsa or pico de gallo

1 tbsp shredded cheese (optional)

1/4 tsp garlic powder

Salt and pepper to taste

Cooking spray or 1 tsp olive oil

Preparation

  1. Heat a skillet on medium heat and spray with cooking spray.
  2. Mix together the eggs and liquid egg whites.
  3. Pour in eggs, season with garlic powder, salt, and pepper, and scramble until fluffy.
  4. Warm tortillas in a dry pan or microwave for 10 seconds.
  5. Divide scrambled egg whites between tortillas.
  6. Top with avocado, salsa, and a sprinkle of cheese.
  7. Serve warm with a side of fruit or Greek yogurt.
