Savory Egg White Breakfast Tacos
Soft, high-protein breakfast tacos made with scrambled egg whites, avocado, and salsa. They’re fast, delicious, and great for refueling after practice.
Ingredients
3/4 cup Eggland's Best Liquid Egg Whites
2 small corn tortillas
1/4 avocado, sliced
2 tbsp salsa or pico de gallo
1 tbsp shredded cheese (optional)
1/4 tsp garlic powder
Salt and pepper to taste
Cooking spray or 1 tsp olive oil
Preparation
- Heat a skillet on medium heat and spray with cooking spray.
- Mix together the eggs and liquid egg whites.
- Pour in eggs, season with garlic powder, salt, and pepper, and scramble until fluffy.
- Warm tortillas in a dry pan or microwave for 10 seconds.
- Divide scrambled egg whites between tortillas.
- Top with avocado, salsa, and a sprinkle of cheese.
- Serve warm with a side of fruit or Greek yogurt.
