2 Eggland’s Best eggs, large

2 cups low-fat cottage cheese

1/2 cup vanilla protein powder

Cooking spray

1 cup berries (blueberries, raspberries, blackberries, or sliced strawberries)

4 teaspoons maple syrup

Preparation

  1. Preheat oven to 350 degrees F.
  2. In a blender or food processor, blend Eggland’s Best eggs, cottage cheese, and protein powder until smooth.
  3. Mist four (8 ounce) ramekins with cooking spray and evenly pour in the cottage cheese mixture.
  4. Bake for 30 minutes, until top is set. Let them cool at room temperature for 1 hour and then refrigerate for at least one hour to chill.
