4 Eggland's Best classic white eggs, large

3 mushrooms

½ bell pepper

½ onion

¼ pound turkey sausage (loose, not a link

pinch kosher salt

pepper to taste

1 tsp avocado oil

1 cup shredded cheese

4 gluten free tortillas (we used rice flour)

½ avocado (sliced)

Pico de gallo (optional)


  1. Cook sausage on medium heat.

  2. Set cooked sausage aside.

  3. Cut bell vegetables.

  4. Cook vegetables in leftover grease until soft

  5. Whisk four eggs.

  6. Remove vegetables, pour in avocado oil and add the eggs.

  7. Cook until eggs are slightly runny, or for about 2 minutes.

  8. Add sausage, vegies and cheese

  9. Assemble quesadilla + extra cheese

  10. Top with pico de gallo and avocado. Enjoy!
