Jack o Lantern Cupcakes
Delicious and easy Halloween cupcake made with homemade chocolate cake mix and vanilla orange frosting topped with cute Jack-O-lantern cupcake toppers and Halloween sprinkles.

2 ¾ cup Chocolate cupcake mix (1 1/3 cup all purpose flour, 1 cup sugar, ½ cup cocoa powder, ½ tsp baking soda , ½ tsp baking powder, ¾ tsp coffee and ½ tsp salt)
1 cup buttermilk
1/3 cup vegetable oil
1 Eggland’s Best Large egg
2 tsp vanilla extract
Orange vanilla frosting

- In a small bowl add buttermilk, vegetable oil, Eggland’s Best large egg, and vanilla extract.
- In a large bowl add wet ingredients to dry ingredients and mix well.
- Transfer cupcake batter to prepared tin. Bake at 375° F for 15 minutes.
- Once the cupcake is cool enough to touch, frost the cupcake and arrange with toppers and Halloween sprinkle.
