Lemon Coconut Blondies

1 stick butter, melted

1 cup granulated sugar

2 Eggland's Best eggs, large

½ teaspoon vanilla extract

½ teaspoon coconut extract

½ teaspoon lemon extract

½ teaspoon baking powder

1 cup flour

½ teaspoon salt

1 cup shredded coconut

2 tablespoon lemon zest

1 cup white chocolate chips


2 tablespoon lemon juice

½ cup powdered sugar


½ cup shredded coconut

1 tablespoon lemon zest


  1. Preheat the oven to 350°F. Line an 8 x 8 pan with parchment paper and set aside.
  2. In a large mixing bowl whisk together the melted butter and sugar. Add the eggs, vanilla, lemon extract, and coconut extract. Mix well.
  3. In a separate bowl stir together the baking powder, salt, and flour.
  4. Add the wet ingredients into the dry and fold together until just mixed and no clumps of flour remain.
  5. Fold in the coconut, lemon zest, and white chocolate chips.
  6. Pour the batter into your prepared pan, spreading into an even layer.
  7. Bake for 30 minutes or until the blondies are golden brown. Cool completely.
