6 Tbsp. Unsalted Butter

1 cup Semisweet Chocolate Chips

1 cup Granulated Sugar, divided

2 Eggland’s Best Eggs, large

1 cup Flour

½ cup Cocoa Powder

1 tsp Baking Soda

½ tsp Salt

9 large marshmallows, cut in half


  1. In a microwave-safe bowl, combine butter and chocolate chips. Microwave for 30-second increments until fully melted, stirring after each increment.
  2. To the bowl, add ¾ cup sugar, and eggs, and whisk until smooth. Add in cocoa powder, baking soda, flour, and salt. Use a rubber spatula and stir until smooth.
  3. Cover bowl with plastic wrap and chill in the refrigerator for 1 hour.
  4. Place the remaining ¼ cup sugar in a small bowl and set aside.
  5. Line 3 sheet trays with parchment paper. Use a 1-ounce scoop to scoop balls of dough, or eyeball two Tablespoon size pieces of dough.
  6. Flatten out to a disk and place half a marshmallow in the center. Wrap the sides of the dough around the marshmallow to encase it. Coat the cookie with granulated sugar and place on the sheet tray.
  7. Continue to stuff and coat, leaving the cookie about 3 inches apart.
  8. Preheat oven to 350°F.
  9. Bake for 8 minutes.
  10. Remove from oven and cool cookies on the tray for 30 minutes.
