Ingredients

6 Eggland’s Best eggs, large (1 per boat)

1 large french baguette

Goat cheese crumble

Sun-dried tomatoes, chopped

6 basil leaves, sliced to garnish

1-2 tbsps olive oil

Preparation

  1. Preheat oven to 375°F. Line baking sheet with parchment paper, set aside.
  2. Slice baguette into 6 equal pieces. Use a knife to carve out a round section from the center of each “boat”. Hollow out inside as much as possible without ripping through sides.
  3. Brush sliced sides and inside of boats with olive oil. Place on prepared baking sheet.
  4. Add roughly 1 tablespoon of goat cheese and a few slices of sun-dried tomatoes to each boat hole.
  5. Crack 1 EB egg on top of cheese and tomato.
  6. Place boats on a large baking sheet and bake for 20 to 25 minutes, or until bread is golden and eggs are set.
  7. Garnish with fresh basil and enjoy!
