Ingredients

1/2 cup warm milk

2 and 1/4 teaspoons active dry yeast

1/4 cup granulated sugar

1/3 cup unsalted butter, melted

8 oz cream cheese, softened

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 cup diced strawberries

Icing (optional)

1 cup powdered sugar

2 tablespoons unsalted butter, softened

1/2 teaspoon vanilla extract

1-2 tablespoons milk (adjust for desired consistency)

Preparation

  1. In a large mixing bowl, combine the warm milk, yeast, and 1/4 cup of granulated sugar. Let sit for 5-10 minutes until the yeast is activated and the mixture is frothy.
  2. Add the melted butter, egg, and salt to the bowl and mix together.
  3. Gradually add the flour to the bowl, stirring until a smooth dough forms.
  4. Turn the dough out onto a floured surface or into a stand mixer and knead for 5-10 minutes, until it is smooth and elastic.
  5. Grease a large bowl with cooking spray and place the dough in the bowl. Cover with a clean towel and let rise in a warm place for 1 hour, or until doubled in size.
  6. In a separate mixing bowl, beat the cream cheese, 1/4 cup of granulated sugar, and vanilla extract together until smooth.
  7. Preheat the oven to 375°F (190°C).
  8. Roll out the dough on a floured surface into a large rectangle, about 1/4 inch thick.
  9. Spread the cream cheese mixture evenly over the dough, leaving a 1-inch border around the edges.
  10. Sprinkle the diced strawberries over the cream cheese mixture.
  11. Roll the dough up tightly, starting at the long edge closest to you, and pinch the edges together to seal.
  12. Cut the roll into 12 equal slices and place them in a greased baking dish.
  13. Bake for 25-30 minutes, or until the rolls are golden brown and cooked through.
  14. For the icing, mix the powdered sugar and butter together until combined and creamy. Mix in the vanilla, then slowly mix in the milk until your desired consistency is reached. The icing should be thick, but pourable.
  15. Allow the rolls to cool for a few minutes before icing or dusting with powdered sugar.
