This recipe is easy to make and a delicious take on a classic. The sweetness and tartness of the strawberries and cream cheese are the perfect combination for a delicious first day of school breakfast. The best part is that you can make the compote and whipped cream cheese in advance and place it in the fridge. When you’re ready just make you’re waffles and enjoy!

Ingredients

Strawberry Waffles

2 large Eggland’s Best eggs


2 cups all-purpose flour 


1 tablespoon sugar 


4 teaspoons baking powder 


1/4 teaspoon salt 


1 3/4 cups milk 


1/2 cup vegetable oil

1 tsp of vanilla

2 tbs of natural strawberry flavor


Strawberry Compote

500g fresh or frozen strawberries

1/2 cup sugar

1 lemon

1 tsp corn starch

Whipped cream cheese

8oz cream cheese

1 cup powder sugar

1 cup of heavy whipping cream

Preparation

Strawberry Waffles
  1. 

Heat waffle maker.
  2. In large bowl, combine all dry ingredients and whisk to make sure there’s no lump and the flour is airy
.
  3. Make a well in the dry ingredients and add the two eggs. Break the yolks and add the oil and mix slightly.
  4. Add half of the milk and wish half way and incorporate the vanilla and strawberry flavor. 
Beat in remaining of the milk and mix just until smooth. 

  5. Pour batter onto center of hot waffle maker and close the lid. Follow the instructions of your waffle maker to get perfect results.
Strawberry Compote
  1. Quarter the strawberries and juice the lemon. In a sauce pan combine all the ingredients and mix well.
  2. Place the sauce pan on the stove on medium high heat. Let it come to a boil and lower the temperature to medium.
  3. Cook until thicken and the strawberries are slightly translucent. Remove from the heat.
Whipped cream cheese

  1. Place the cream cheese in a large bowl and whip until light and fluffy.
  2. Sift the powder sugar and whip until combined.
  3. Lastly add the heavy whipping cream and whip until soft picks. Now the whipped cream cheese is ready to use.
Plating the Waffles
  1. In a plate place two waffles, add three tablespoons of compote, pipe the whipped cream cheese (or use a tablespoon to add a dollop).
  2. Drizzle compote and Finish with a strawberry on top.
