Ube coconut lava toast is possibly my current favorite breakfast in the sweet category. I try to not eat a lot of sweet breakfast, but it's just so good especially when it's still warm and custardy!

Ingredients

4 brioche loaves

2-3 tbs chocolate spread

1/2 cup whipped cream

3 Eggland's Best large eggs

1 tbs ube powder

1 tbs unsalted butter

1/4 cup milk

Preparation

  1. Whisk the cream for 2 minutes just before it reaches a soft peak. Add ube powder and mix well
  2. Spread chocolate spread around the loaves, then add the cream in the center. Cover with another loaf. Repeat the same process with the remaining loaves
  3. Whisk the eggs and milk. Dunk the loaves and let them soak
  4. Melt the butter over medium heat. Transfer to the hot skillet and cook until golden, 3 to 4 minutes per side. Transfer to a plate
  5. Add the remaining cream on top and sprinkle with grated coconut
