4 Eggland’s Best Eggs, large

32 oz Miso broth (ready to go)

2 cups vegetable broth

1 tablespoon lemongrass paste (optional)

2 tablespoons butter

10 shitake mushrooms, sliced

1 package soba noodles

2-4 bok choy “bunches”, ends cut and leaves mostly separated

Garnishes

⅓ cup green onions/scallions, chopped

Sesame seeds (optional)

Furikake (optional)

Olive oil

Flakey sea salt

Preparation

  1. Start by preparing your 6 minute eggs. Bring a medium pot of water to a boil over high. Once boiling, carefully lower your eggs into the pot using a slotted spoon. Alternatively you can place the eggs in warm water, and soon as it starts to boil, start the timer for 6 minutes.
  2. While eggs cook, fill a medium bowl with very cold water. When eggs are done, add to cold water bowl, and cool enough to handle, placing in fridge for an hour if you have the time. Drain and peel eggs to prepare them for the soup, carefully cutting them in half lengthwise.
  3. In a soup pot, add miso and vegetable broth. Cover and bring to a low simmer. Add lemongrass paste if using.
  4. In a saucepan over medium heat, add butter and melt. Next, add your mushrooms, toss and cook for a few minutes until fragrant and lightly golden. Remove from heat and set aside. Increase the heat of your stock pot to boiling (still covered as to not reduce) and add your noodles, cooking according to package directions.
  5. As soon as your noodles are almost done (80%) there, add your bok choy. At the 3 minute mark, turn off heat.
  6. Prepare to serve by ladling the soup into bowls. Top with your sautéed mushrooms, 6 minute eggs and garnishes. Enjoy!
