Witches Brew Mocktail
An elevated twist on a classic cocktail

- ¾ cup pineapple juice
- 3 tablespoons lime juice
- ½ oz. spiced apple rosemary simple syrup*
- 3 tablespoons Eggland's Best 100% Liquid Egg Whites
- 1 dash of aromatic bitters
- Juice of half an orange
- ½ cup granulated sugar
- ½ cup water
- 1 large Granny Smith apple, peeled, cored, and cubed
- 1 jalapeno pepper, seeded and sliced
- 1 sprig of fresh rosemary
Into a shaker full of ice, add in the pineapple juice, lime juice, simple syrup, egg white, aromatic bitter, and juice of an orange.
Shake vigorously until combined until the egg white is incorporated and frothy, about 30 seconds.
Strain into chilled coupe glasses and garnish with fresh rosemary.
In a small saucepan, combine the sugar, water, apple, jalapeño and rosemary. Set pan over medium heat and bring the mixture to a simmer, stirring.
Continue to simmer, stirring until sugar dissolves, about 3 minutes. Remove pan from the heat, cover, and steep for 15 minutes.
Strain syrup through a fine-mesh strainer; discard solids. Allow syrup to cool to completely.
Syrup will keep in an airtight container in the refrigerator for up to 1 month.
