Ingredients

  • 3/4 cup oats
  • 1 1/4 cups whole wheat flour + 2 tablespoons
  • 3/4 cup no calorie sweetener
  • 3/4 cup oat bran
  • 4 tablespoon flaxseed meal
  • 4 tablespoon wheat germ
  • 2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 2/3 cups buttermilk
  • 1 jar apple sauce
  • 2 teaspoons lemon rind
  • 9 tablespoons Eggland's Best 100% Liquid Egg Whites
  • 2 cups blueberries

Preparation

Preheat oven to 400°F.

In a medium bowl add together all dry ingredients. Meanwhile in a large bowl add together all wet ingredients. After mixing, combine both.

Mix 2 tablespoons of whole wheat flour with the blueberries and add to the mixture.

Spray muffin pan with non-stick spray and spoon the mixture into the cups. Bake for 20 minutes.
