Ingredients

  • 2 slices of your favorite bread (pumpernickel would be great)
  • 1 ounce goat cheese
  • 2 ounces smoked salmon
  • handful of baby spinach
  • 1 Eggland's Best egg, large
  • splash of milk
  • salt and fresh ground pepper

Preparation

  1. Spread goat cheese on one slice of bread. Top with smoked salmon and spinach. Assemble sandwich.
  2. Heat a pan to medium heat. In a shallow bowl, whisk together the egg and ~1T milk with a dash of salt and pepper. Dip the sandwich, making sure both sides are well coated.
  3. Cook a few minutes on each side (probably 3-5) until nice and golden brown.
  4. Remove from heat and cut into wedges if desired. Serve warm!
