Ingredients

1 cup quick oats

1 1/4 cup all purpose flour

1/2 TSP baking powder

1/2 TSP kosher salt

1/2 cup salted butter, room temp

1 cup light brown sugar, lightly packed

1 Eggland's Best egg, large + 3 TBSP Eggland's Best Liquid Egg Whites

2 TSP vanilla extract

3/4 cup caramel

1/2 cup semisweet chocolate chips

3/4 cup semi sweet chocolate chips

3/4 cup pecans, finely chopped

Preparation

  1. Preheat the oven to 350 and prepare a square baking pan.
  2. Combine oatmeal, flour, salt, and baking powder in a bowl. Set the bowl aside. In a separate bowl, cream butter and sugar together. Add eggs and Eggland's Best Liquid Egg Whites and vanilla extract. Cream together until smooth.
  3. Fold the wet ingredients into the bowl with the dry ingredients. When the dough is well combined add the chocolate chips.
  4. Spread 2/3 of the dough into the bottom of a prepared square baking pan. Bake for 7 minutes. Remove the pan from the oven. Sprinkle chocolate chips and chopped pecans over the cookie. Then drizzle a layer of caramel over.
  5. Take the remaining dough and scoop 1-2 tablespoon-sized dollops and spread them over the top into flat disks. Bake for another 20 minutes.
  6. Remove the cookie bar from the oven and let cool for 25-30 minutes before cutting and serving.
