These Star Cookies have a light texture and a fruity middle that adds just the right amount of sweetness to this cookie. If you are looking for an easy and delicious cookie recipe that the whole family will love, this is it!

Ingredients

2 sticks or 1 cup of unsalted butter, softened

1 cup white granulated sugar

2 Eggland's Best Large Eggs

1 teaspoon vanilla

1 teaspoon Kosher salt

3 cups all-purpose flour (scooped and leveled)

Strawberry jam or your family's favorite fruit jam

Preparation

  1. In a large bowl, cream together the butter and the sugar. Scrape the bowl to ensure that everything gets mixed together.
  2. Next add in the eggs and beat one in at a time. Then add in the vanilla, Kosher salt, and the flour. Mix all of the ingredients together until everything is moistened. Don't overmix.
  3. Divide the dough in half and wrap each section in plastic wrap. Place into the fridge and let the dough chill for at least 2 hours or overnight.
  4. When the dough is chilled, preheat the oven to 350 degrees.
  5. Just remove a little bit of the dough at a time and place on a lightly floured surface. Roll the dough until it's 1/8" thick. Then using a medium sized star cookie cutter, cut out two stars. Then in one of the stars, cut out a smaller star.
  6. Place the cookies on cookie sheet that has been lined with parchment paper. Place the cookie sheet into the fridge and let it chill for 15 - 20 minutes. Then continue cutting out some more of the stars. Then repeat this process; cut, chill, bake. Place into the oven and bake for 7 to 9 minutes. You want them to be lightly browned on the edges.
  7. When they are done, remove from the oven and let them cool on a wire cooling rack.
  8. Once they have cooled, take a small amount of the jam and place it on the solid star cookie. Then top with a cookie that has the star cutout. Repeat this process until you are done.
  9. Enjoy!

You can use any flavor of jam that your family loves. This recipe is also very versatile. Just change up the cookie cutters and make it for any occasion. Chilling the dough both before you cut it and after it's on the cookie sheet are key so that they hold their shape.
