Tiramisu Cups
A delicious twist on this creamy coffee-flavored dessert!

Ingredients
3/4 cup espresso
3 large EB eggs, egg yolks only
¼ cup granulated sugar
1 teaspoon vanilla extract
3/4 cup heavy cream
8 oz mascarpone
18 ladyfinger biscuits (also called boudoir biscuits or savoiardi biscuits)
cocoa powder, for dusting
Preparation
To make the coffee:
*espresso can be made using pods or a percolator*
- Prepare espresso.
- Let the coffee cool in a shallow bowl while you prepare the rest of the recipe.
To make the cream filling
- Whisk together the egg yolk, sugar and vanilla.
- Add the cream and mascarpone.
- Whisk until soft peaks form.
To assemble the Tiramisu
- Break each ladyfinger biscuit into 2 pieces.
- Dip the edges of each biscuit into the coffee.
- Dampen the edges, but do not soak the biscuit all the way through.
- Arrange 2 pieces of the biscuits on the bottom of each glass.
- Dollop a tablespoon of the cream filling on top with a piping bag.
- Repeat the above steps in each glass until you have 3 layers of biscuits and 3 layers of cream.
- Refrigerate the tiramisu for at least 1 hour.
- Sprinkle with cocoa powder just before serving.
