4th of July Dessert Pizza

Ingredients
1/2 cup sugar
1 stick softened butter
1 extra large Eggland's Best egg
1 teaspoon vanilla extract
1 1/2 cups white whole-wheat flour
1/8 teaspoon salt
3/4 teaspoon baking powder
Vanilla cream cheese spread
1/2 cup vanilla Greek yogurt
3 tablespoons softened cream cheese
2 tablespoons sugar
1/2 cup blueberries
1/2 cup sliced strawberries
Preparation
- Preheat the oven to 350 degrees.
- In a large mixing bowl, beat together the sugar and butter. Add in the egg and vanilla and beat again.
- Gently mix in the flour, salt and baking powder until the mixture forms a dough.
- Spray a pie pan or pizza pan with nonstick spray and press cookie dough down until it covers the bottom of the pie pan or the pizza pan in a circle shape. Dough should be about 1/2 inch thick.
- Bake for 12 minutes until cookie is cooked through. Cool cookie- you can put it in the fridge or freezer for quicker cooling.
- Mix together the Greek yogurt, cream cheese and sugar and spread onto the cooked sugar cookie crust. Top with blueberries and strawberries.
- To serve, cut into triangle pieces.
