Ingredients

2 cans black beans

1 onion slice

1/2 teaspoon minced garlic

2 cups mixed vegetables

1 Eggland's Best egg (large)

1 teaspoon chili powder

1/4 cup buffalo sauce

2 cups chia seeds

1 cup uncooked oatmeal

Preparation

  1. Rinse the black beans.
  2. Put veggies, onion and garlic in food processor and chop until fine. Put mixture in a large bowl.
  3. Put rinsed black beans in food processor to break up the beans a bit. Put beans in the bowl with the vegetable mixture, and blend together.
  4. Add Eggland’s Best egg, chili powder and buffalo wing sauce in mixture and blend.
  5. Add chia seeds and oatmeal until mixture has the consistency of hamburger, then form the mixture into patties.
  6. To cook, heat a little oil to sauté in a pan, bake in the oven or cook on your grill. Cook until brown on all sides.
  7. Optional: Serve on buns with melted cheese and any condiments you like.
