This is the perfect Keto blueberry mug cake recipe. It is creamy, sweet, decadent, and completely guilt free! If a vanilla cake and a blueberry cheesecake had a low carb baby this would be it.

Ingredients

2 tablespoons of avocado oil

1 Eggland's Best Large Egg

1 teaspoon of baking powder

1/2 teaspoon of vanilla extract

1/4 cup of unsweetened almond milk

3 tablespoons of stevia in the raw

1/4 cup of coconut flour

2 ounces of cream cheese (softened)

1/4 cup of blueberries

Preparation

  1. First, add all the wet ingredients to a bowl then whisk them together.
  2. Now add all the dry ingredients to the same bowl and whisk them in as well.
  3. Lastly, add in the softened cream cheese and blueberry and whisk one last time.
  4. Pour the batter into two microwave-safe mugs or small CorningWare dishes.
  5. Cook in the microwave 1 minute at a time until it is cooked in the center of the top. (Should take about 2 minutes.)
