These chocolate stuffed chocolate chip cookie bars are soft, gooey, and melt-in-your-mouth delicious. They're gluten free, dairy free, and refined sugar free, and perfect for any occasion!

Ingredients

2 1/2 cups oat flour

1 cup coconut sugar

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 tsp pure vanilla extract

2 Eggland's Best Large Eggs

1/2 cup coconut oil, melted

3 cups dark chocolate chips/chunks, divided (I use dairy free & refined sugar free)

Preparation

  1. Add 2 cups dark chocolate chips/chunks to a microwave safe glass dish and heat in the microwave until melted, stirring every 30 seconds so the chocolate doesn’t burn. You can also melt the chocolate using a double boiler method, if preferred.
  2. Pour the melted chocolate into an 8x8 square pan lined with parchment paper and spread it out evenly. Place in the freezer for 20-30 minutes to allow the chocolate to harden. While the chocolate hardens, make the cookie dough.
  3. Add the eggs to a large bowl and whisk them together, then gently whisk in the melted coconut oil and vanilla extract. Add the oat flour, coconut sugar, baking soda, baking powder, and salt to the wet ingredients and mix everything together. Once mixed, fold in the remaining 1 cup chocolate chips.
  4. Once the chocolate is hardened, remove it from the freezer. Remove the chocolate square from the pan and set it aside.
  5. Line the same 8x8 pan with parchment paper and add half of the cookie dough to the bottom of the pan. Spread it out evenly with a spatula, ensuring it covers the entire bottom of the pan.
  6. Place the hardened chocolate square on top of the cookie dough, then top the chocolate square with the remaining cookie dough. Spread it out evenly and top with additional chocolate chips, if desired.
  7. Bake at 350°F for 20-25 minutes, depending how gooey you want them to be (I bake for 25 minutes). Once baked, remove the cookie dough bars from the oven and let them cool completely. Once cooled, slice and enjoy!
