This Easter Egg Fruit Pizza is so delicious and healthy, it’s perfect for dessert or brunch on Easter! The combination of the paleo sugar cookie crust, plus creamy sweet cream cheese icing and fresh fruit is wonderful!

Ingredients

Cookie Ingredients:

2 cups almond flour

2 tbsp honey

2 tbsp coconut oil, melted

1 tsp vanilla extract

1 Large Eggland's Best Egg

Icing Ingredients:

8 oz cream cheese

3 tbsp grass-fed butter, melted

3 tbsp maple syrup

1 tsp vanilla

Other ingredients:

1 cup fruit

Preparation

  1. Preheat oven to 350F (180C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Mix together the almond flour, honey, coconut oil, vanilla extract, and egg.
  3. Roll out the dough on a piece of parchment paper to 1/4 inch thickness. (I find it easiest to place a piece of parchment paper over the dough and roll on top of that).
  4. Use a knife to cut an egg shape. Bake cookies for 8 minutes, or until the edges turn golden.
  5. While the cookies are baking make the icing by mixing all of the ingredients together.
  6. Once the cookie has cooled, top with icing and fruit. Enjoy!
