1 jar of lemon curd

3/4 cup Eggland's Best 100% Egg Whites

1 cup sugar

1/2 tsp cream of tartar

1/8 tsp salt

  1. Preheat oven to 225° F.
  2. Place lemon curd into shells and fill to the top.
  3. To make the meringue topping, pour egg whites into a spotlessly clean bowl. Whip the egg whites until they are glossy and smooth, then add the cream of tartar to help the egg whites hold their form. Slowly add the sugar to the Eggland's Best 100% Egg Whites about a tablespoon at a time, beating after each addition until the sugar is incorporated. Continue beating until stiff peaks form.
  4. Pipe on to mini tarts and bake in the oven for 1 hour, or until the meringue has set.
