For these cookies, we took the traditional Snickerdoodle cookies that we all love so much and made them even better. These cookies are made to be cookie sandwiches, although you can just do a single cookie with the maple buttercream on top.

Ingredients

1 Cup - soft, unsalted butter

1 1/2 Cup- Granulated Sugar

1 tsp Vanilla extract

2 Eggland's Best eggs, large

2 3/4 Cup All-Purpose Flour

1 1/2 tsp Cream of Tartar

1/2 tsp baking soda

1 tsp salt
Maple Cream:

1/2 Cup - soft, unsalted butter

2 Cups Powdered sugar

1/4 Cup Maple Syrup

In a separate bowl:

1/4 Cup Sugar

1 1/2 Tbsp Cinnamon

Preparation

  1. Preheat oven to 350°F.
  2. Prep baking sheets with parchment paper or silicone mats.
  3. In a mixer, mix 1 cup butter and sugar for about 1-2 minutes.
  4. Add in vanilla and eggs. Mix for another 1 minute. Stop mixer.
  5. Scrape bowl to make sure thy everything is combined well. Slow mixer, and add in flour, baking soda, cream of tartar, and salt.
  6. Mix well until the dough forms. Stop mixer.
  7. Roll into small bite-sized balls, roll in cinnamon & sugar mixture.
  8. Put the dough balls on a plate and refrigerate for about 30 minutes.
  9. Once 30 minutes is up, place about 6 balls on a baking sheet, and bake for 9-11 minutes at 350°F.
  10. Let cool for about 15-20 minutes.
  11. While cookies cool, make the maple buttercream frosting:
  12. In a large bowl using an electric hand mixer or in the bowl of a stand mixer fitted with the paddle attachment, beat the remaining 1/2 cup butter on medium speed until smooth.
  13. Gradually beat in 2 cups powdered sugar until smooth. Beat in maple syrup. Increase speed to medium-high and beat frosting 1-2 minutes or until fluffy and light.
  14. Lay half of cooled cookies bottom side-up. Use a piping bag, or a Ziploc bag with one tip snipped off add about 1 generous tablespoon of frosting on cookies. Place a second cookie on top to create a sandwich.
