Simple and sweet buttery mini muffins that are toddler friendly. These are moist, delicious and made with applesauce instead of sugar.

Ingredients

1/2 teaspoon of salt

1 1/2 teaspoon baking powder

2 Eggland's Best eggs, large


3/4 cup of applesauce

1 1/2 stick of sweet butter.

1 teaspoon pure vanilla extract

1/4 cup of milk

Choice of jelly bean

favorite frosting for topping

Preparation

  1. Preheat the oven to 350° F and position a rack in the middle of the oven.
  2. Whisk the flour, baking powder and salt together in a medium bowl.
  3. In another bowl, beat the EB eggs with applesauce until light and foamy, about 2/3 minutes. While beating, gradually pour in the melted sweet butter and then the vanilla.
  4. Keep mixing slowly and add half of the flour mixture. When all mixed add the milk, and slowly the remaining flour mixture; make sure to not over-mix the batter.
  5. Divide the batter evenly in the prepared muffin tin. You can use a regular muffin tin or a mini muffin tin.
  6. Bake for about 15 min or until you do the cake test with a toothpick (insert the toothpick in the middle, if it comes out clean it's ready!)
  7. Let it cool for 10 min and frost and decorate with all the fun jelly beans.
