Orange Zucchini Cupcakes

- 1 1/3 cup packed brown sugar
- 1/2 cup canola oil
- 3 Eggland's Best Eggs (Large)
- 1 teaspoon vanilla extract
- 2 1/2 cups flour
- 3 teaspoons cinnamon
- 3 tablespoons baking powder
- 1/2 cup orange juice
- 1 1/3 cup grated zucchini
- Buttercream icing (store bought)
Preheat your oven to 350 F.
In a large mixing bowl, mix eggs, sugar, oil, vanilla extract, and orange juice with a hand mixer.
Add the remaining dry ingredients, mixing on low-speed until well combined.
Stir in grated Zucchini.
Line a 12-cup muffin pan with paper liners, and fill each cup 2/3 full with batter.
Bake for 25 minutes or until a tooth pick inserted in the center cupcake comes out clean.
