Ingredients

For Pavlova:

3/4 cup 100% Eggland's Best Egg Whites *room temp*

1 tablespoon lemon juice

1 1/2 cup sugar

2 tsp. corn starch

1/2 tablespoon vanilla extract

For whipped cream:

1 cup cold heavy cream

1 tablespoon sugar

Your choice of mixed berries (we used raspberries, blackberries and blueberries plus fresh rosemary for garnish)

Preparation

  1. Preheat oven to 225°F. Make sure your egg whites are at room temperature. Place egg whites in a stand mixer and whisk on high until frothy.
  2. Add in sugar gradually until you have used all. Whisk on high for 5-6 minutes.
  3. Add in lemon juice and vanilla extract. Continue to whisk on high until mixture is glossy and stiff peaks form.
  4. Line a cookie sheet with parchment paper.
  5. Place egg white mixture in to piping bag and pipe onto the cookie sheet.
  6. Place in oven and bake for 1 hour and 20 minutes.
  7. Let cool completely before serving.
  8. Add heavy cream and sugar into stand mixer and whip until a soft cream has formed. About 5 minutes.
  9. Place whipped cream on top of pavlova and add fresh raspberries, blackberries and blueberries.
  10. Serve immediately. Any pavlovas you have remaining can last up to 3 days. Just assemble right before you serve.
