Ingredients

3 English muffins, cut in half

2 cups Eggland's Best 100% Liquid Egg Whites

6 slices of tomatoes

3 tbsp. pesto sauce

1/8 cup fresh dill, chopped

1/8 cup fresh parsley, chopped

pinch of salt

Preparation

  1. Place a skillet over med/low heat. Spray the pan with nonstick spray.
  2. Add the egg whites, fresh dill and fresh parsley. Cook until fluffy.
  3. Toast the English muffins. Spread pesto evenly on each English muffin.
  4. Top with a slice of tomato and divide the egg whites on top of each muffin.
  5. Sprinkle the top with a pinch of salt and enjoy!
