These Jam filled cookies are a healthy take on classic cookies. These are gluten-free and a must addition to your Christmas cookie box!

2 cups almond flour

2 cups gluten-free flour

2 cups oat flour

2 tbsp lemon zest

1 tbsp vanilla extract

2 Eggland's Best eggs, large

1/2 tsp salt

1 1/2 cup unsalted butter

1 1/2 cup sugar

1 cup raspberry jam


  1. Preheat the oven at 350°F.
  2. In a bowl add dry ingredients. In a separate bowl add egg, butter and sugar, whisk until fluffy. Now add lemon zest and vanilla. Add dry ingredients to wet.
  3. Cover in plastic wrap and refrigerate for 1 hour.
  4. Roll out the dough. Cut out the cookies with a cookie cutter. And then place it on a baking sheet and bake for 15 minutes. Once completely cool assemble with one tsp jam to one of the cookies and then place the second on top.
  5. Add powdered sugar on top (completely optional)
