With a spicy twist on a breakfast/brunch favorite, this scramble can be made in a multitude of ways and can be made in a pan on a stovetop, or baked in a casserole dish. Want a bit more heat? Add jalapeños to the egg mixture while cooking. Great for any of your at-home brunches.

4 Medium Potatoes

1/4 to 1/2 lb ground chorizo

6 Eggland's Best Large Eggs

1/2 C Shredded Cheddar Cheese

1/2 C Shredded Fajita Cheese

Optional: Sliced jalapeños

Pico de Gallo

2 Roma Tomatoes

1/2 Red Onion

1/2-1 Whole Jalapeño (depending on size)

Cilantro (about 1 TB)

Juice from 1/2 Lime

Salt and Pepper to taste

Sour Cream

Avocado

Preparation

  1. Cube potatoes (can be peeled, I leave skin on) into bite size pieces and cook (in frying pan or on griddle). While potatoes are cooking, prepare chorizo in separate pan. Once both have finished, combine.
  2. While meat and potatoes are cooking, prepare egg mixture as if you were prepping scrambled eggs. Whisk 6 Eggland's Best eggs with a small amount of milk or water.
  3. After combining potatoes and chorizo, pour egg mixture on top and cook on medium heat eggs have set - about 20-25 minutes. You can also transfer all ingredients to a casserole dish and bake at 350, again until eggs have set, usually 25-30 minutes.
  4. Once eggs have set, top with 1/2 cup each of cheddar and fajita cheese and warm until cheese melts.
  5. Top with sour cream, Pico (recipe below) and avocado slices. For Pico, I like to prep while scramble is cooking (or baking).
  6. Chop (can be rough or fine, depending on how you want your Pico) the following: 2 Roma tomatoes, 1/2 Red Onion, 1/2-1 whole jalapeño, Cilantro (about 1 TB)
  7. Add all to bowl.
  8. Squeeze the juice from 1/2 a lime
  9. Salt and pepper to taste
  10. Stir until ingredients are well combined.
  11. Serve over scramble or with chips
