The most famous breakfast in New Jersey is a pork roll, egg, and cheese on a hard roll with salt, pepper, and ketchup. This takes all of those flavors and delivers them in a delicious hash

Ingredients

  • 2 yams, peeled and cut into 1/2 dices
  • 2 tablespoons light olive oil, divided
  • ½ teaspoon garlic salt
  • ¼ teaspoon pepper
  • 8 slices hickory smoked bacon
  • 1 tablespoons butter
  • 1 large sweet onion, diced
  • ½ sweet red pepper, diced
  • 6 ounces canned black beans, rinsed and drained
  • 9 ounces Taylor Ham pork roll, sliced ¼”thick and chopped
  • 1 chipotle chili in adobo sauce, seeds removed, chopped
  • 1 tablespoon of the adobo sauce
  • ½ teaspoon honey
  • 8 Eggland’s Best Eggs (large)
  • hot sauce, salt and pepper, curly parsley for garnish

Preparation

Preheat oven to 400°F. Set two racks in the middle of the oven.

On a rimmed baking sheet, toss the diced yams with 1 tablespoon of olive oil. Spread out in a single layer and sprinkle with garlic salt and pepper. Bake on the lower rack for 30 minutes until tender, turning occasionally. Set aside.

Line a rimmed baking sheet with parchment paper. Place the bacon in a single layer and bake on the upper rack until crisp 16-20 minutes. Remove from parchment and place on paper towel.

Melt the butter and add 1 tablespoon olive oil to a large skillet. Sautee the red pepper and onion until the onion is translucent.

Add the yams, black beans and the chopped pork roll and mix.

Add the jalapeno, adobo sauce and honey. Taste and correct for salt and pepper.

Spray a skillet with cooking spray and cook eggs in batches on medium until whites are set and cooked along the edges.

Place the black bean, yam and pork roll hash on a plate, top with two eggs and two pieces of bacon crossed. Put a couple of drops of hot sauce on each yolk and then salt and

pepper the eggs. Garnish with parsley.
