Sunnyside Up Breakfast Sandwiches with Creamy Green Chile Sauce
A perfect sunnyside up egg tops chicken breakfast sausage and spicy pepper jack cheese. It's sandwiched between a creamy green Chile sauce slathered English muffin. Spicy, creamy, and so delicious!

Ingredients
For the sandwiches
4 English muffins, toasted
4 chicken breakfast sausage patties, cooked
½ cup shredded pepper jack cheese
1 Tablespoon butter
4 Eggland’s Best Large Eggs
For the Creamy Green Chile Sauce
4 ounces roasted green chiles
¼ cup sour cream or Greek yogurt
1 Tablespoon cilantro
1 clove garlic
¼ teaspoon cumin
Juice of ½ of 1 lime
Salt, to taste
The Creamy Green Chile Sauce can be made up to 2 days in advance (it's also great on tacos!). If feeding a crowd, toast your English muffins on a baking sheet under the broiler. Be sure to shred your own cheese: it always melts better this way!
Preparation
For the Creamy Green Chile Sauce
- Combine all ingredients in a food processor or blender.
- Blend ingredients until completely combined and smooth.
- Transfer to a lidded container if not using right away, and store in the refrigerator for up to 2 days.
For the sandwiches
- Place butter in a medium saute pan set over medium-low heat.
- Once the butter has melted, carefully crack Eggland’s Best eggs into the pan. Season with salt if desired. Top with a tight-fitting lid and allow to cook, undisturbed, for about 2 minutes. You want the whites cooked through, but the yolk still runny!
- Meanwhile, top one-half of the toasted English muffins with the chicken breakfast sausage and shredded pepper jack cheese. Spread the Creamy Green Chile Sauce on the other half.
- Top the sausage with the sunnyside-up egg, and extra cilantro if desired.
